Pickled Beets

Ingredients

  • 3 pound beets
  • 1 stick cinnamon
  • 1 teaspoon whole allspice
  • 1/2 cup sugar
  • 6 whole cloves
  • 1 pint vinegar
  • 1/2 cup water

Directions

  1. Boil beets until tender.
  2. Remove skins.
  3. Tie spice.
  4. In cheesecloth heat vinegar water, sugar and spices to boiling point.
  5. Add beets and boil 5 minutes.
  6. Pack in sterile jars and fill with hot liquid.
  7. Seal.
