Pepper Cabbage

Ingredients

  • 2 cup shredded cabbage
  • 1/2 cup hot salad dressing
  • 1 large green pepper
  • 1 teaspoon salt
  • 1 tablespoon butter
  • salt
  • pepper
  • 1 teaspoon flour
  • 1 egg yolk
  • 1/2 teaspoon dry mustard
  • 1/2 cup vinegar

Directions

  1. Mix the cabbage, pepper, chopped fine and salt.
  2. Let stand 1 hour in cool place.
  3. Drain off all liquid.
  4. Make a hot dressing with rest of ingredients.
  5. Melt the butter and blend in the flour.
  6. Add vinegar and stir until mixture thickens.
  7. Mix mustard, salt and pepper and add to the liquid.
  8. Cool for 4 minutes, pour over the beaten egg yolk and mix well.
  9. Cook for 1 minute more.
  10. Pour this over the pepper cabbage and mix well.
