Meat Loaf II

Ingredients

  • 3 pound veal
  • 3 pound pork
  • 6 pound beef
  • 2 medium onions
  • 3 cup raw carrots, (1 pound)
  • 4 tablespoon salt, (2 ounces)
  • 3/4 teaspoon pepper
  • 6 eggs
  • 6 cup bread crumbs
  • 3 cup evaporated milk
  • 4 slices fat salt pork

Directions

  1. Put meat, onions and carrots through food chopper, add seasonings, eggs, crumbs and milk.
  2. Shape into loaves and place in greased baking pans.
  3. Lay salt pork over top.
  4. Bake in a hot oven (425f) 15 minutes, then reduce to a slow oven (350f).
  5. About 1 hour is required for baking.
  6. Baste every 15 minutes.
