Meat Fritters
Ingredients
- scraps of cold meat
- 3/4 pound flour
- 2 ounce butter
- 2 egg whites
- 1/2 pint water
Directions
- Work the flour quite smooth with the water, add the butter just slightly melted, and stir in the whites of the eggs well beaten up.
- Cut the meat thin, season with pepper and salt, mix it with the batter, drop a small quantity at a time into a frying-pan of boiling lard, and fry for six or seven minutes.
- Brown both sides.
