Mashed Potatoes
Ingredients
- 50 medium-sized potatoes
- 3 gallon boiling water
- 1/4 cup salt, (2 ounces)
- 1 cup butter, (1/2 pound)
- 2 2/3 cup evaporated milk
- 2 2/3 cup potato, water
Directions
- Pare potatoes and cook until tender in boiling water to which salt has been added, about 40 minutes.
- Drain and force through a potato ricer, or mash.
- Save potato water.
- Add butter, milk and potato water, and more salt if needed.
- Beat until white and fluffy.
- More milk may be needed.
- Pile lightly on a hot dish.
- Amount of butter may be reduced or omitted if more evaporated milk and less water is used.
