Lemon Filling II
Ingredients
- 3/4 cup sugar
- 1 tablespoon butter
- 3 tablespoon cornstarch
- 3 tablespoon lemon juice
- 1 lemon rind
- 2 egg yolks
Directions
- Mix com starch and sugar, add boiling water, stirring constantly.
- Cook 2 minutes, add butter, egg yolk and rind and juice of lemon.
- Bake the crust, pour in the cooked mixture.
- Make a meringue of the whites of eggs; spread on top and bake until a light brown.
