Hog Maw

Ingredients

  • 1 pig's stomach
  • 2 1/2 cup bread crumbs
  • 2 pound smoked sausage, meat diced
  • 1 medium onion, chopped
  • 2 cup chopped celery
  • 3 cup boiled potatoes, diced
  • chopped parsley
  • 3 cup sliced apples
  • salt
  • pepper

Directions

  1. Clean stomach well and soak in salt water.
  2. Combine all ingredients and mix well.
  3. Stuff the stomach with the mixture and sew up the opening.
  4. Simmer for 2 hours in a large kettle with water to cover.
  5. Remove to baking pan with hot fat, brown in hot oven (400f) basting frequently.
  6. Slice with sharp knife.
