Hickory Nut Cake

Ingredients

  • 1/3 cup butter
  • 4 teaspoon baking powder
  • 1 1/2 cup sugar
  • 2 cup flour
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup chopped hickory nut, meats
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon extract

Directions

  1. Cream the butter, add the sugar and mix well.
  2. Add the egg-yolks, the nut meats, and the flour and baking powder sifted together.
  3. Then add the milk, vanilla and lemon extract.
  4. Beat vigorously for two minutes.
  5. Add the whites stiffly beaten.
  6. Mix thoroughly and pour into two layer-cake pans prepared with buttered paper.
  7. Bake twenty-five minutes in a moderate oven.
  8. Ice with confectioner’s icing.
