Cottage Pudding



  1. Mix flour, baking powder and salt and sift twice.
  2. Cream butter until soft; add sugar gradually, beating until light.
  3. Beat in the egg and flavoring.
  4. Add flour mixing alternately with the milk, beating smooth after each addition.
  5. Turn into a buttered square tin (8 x 8 x 2 inches).
  6. Bake in moderate oven (350f) for about 40 minutes.
  7. Serve with butterscotch or orange sauce.
  8. It’s delicious covered with crushed berries or other fruits.
