Green Tomato Relish

Ingredients

  • 6 quart (about 36 to 40 medium-sized) chopped green tomatoes
  • 1 1/2 cup chopped red sweet pepper
  • 3 cup sugar
  • 1/4 cup salt
  • 1 1/2 quart vinegar
  • 1 1/2 quart chopped onion
  • 2 tablespoon whole mixed pickle spices
  • 3 cup chopped green pepper

Directions

  1. Mix tomatoes and salt thoroughly.
  2. Let stand overnight; drain.
  3. Combine with chopped onions, green and red peppers, sugar, and vinegar.
  4. Put spices loosely in a thin, white cloth; tie top tightly, and add to tomato mixture.
  5. Bring mixture to boil; boil gently with spices for 1 1/2 hours or until thickened, stirring frequently, remove spice bag.
  6. Pour relish into hot, sterile jars, fill jars to top.
  7. And seal.
  8. Store in a cool, dry, dark place.
