Escalloped Onions

Ingredients

  • 1 cup onions
  • 1 teaspoon salt
  • 1 quart water
  • 1/4 teaspoon pepper
  • 2 tablespoon butter
  • 1 cup milk
  • 2 tablespoon flour
  • 1/4 cup buttered crumbs

Directions

  1. Wash and peel the onions.
  2. Cook in one quart of water.
  3. Allow to boil five minutes.
  4. Change the water and continue boiling ten minutes.
  5. Change the water again, and when thoroughly cooked (about fifteen minutes more), remove from the fire and drain.
  6. Melt the butter, add the four and salt and mix thoroughly.
  7. Add the milk and cook one minute.
  8. Add the onions, and pour the mixture into a well-buttered baking dish.
  9. Place the buttered crumbs on the top of the onions and bake in a moderate oven for twenty minutes.
