Devilled Tomatoes

Ingredients

  • 2 tomatoes
  • 1/2 teaspoon mustard
  • 2 tablespoon flour
  • 1/48 teaspoon salt
  • 1 tablespoon lard
  • a pinch of paprika
  • 1/8 teaspoon salt
  • 1 hard-cooked egg
  • 1 tablespoon butter
  • 1/2 teaspoon flour
  • 1 tablespoon sugar
  • 2 tablespoon vinegar
  • 1 tablespoon water

Directions

  1. Peel the tomatoes, cut in half and sprinkle with flour.
  2. Place the lard in a frying-pan, and when hot, add the tomatoes.
  3. Brown nicely on both sides, and sprinkle with salt.
  4. When brown, place on a hot platter and pour over them the following sauce: sauce—place the butter in a pan, add the sugar, mustard, salt and paprika, the egg cut fine, and the flour.
  5. Mix well, add the vinegar and water.
  6. Heat, allow to boil one minute, and then pour over the tomatoes.
  7. If the sauce seems too thick when it has boiled one minute, add a little more water.
