Delicious Hazelnut Tart

Ingredients

Directions

  1. Open 1 pound hazelnuts: grate them fine or chop them in an almond grater.
  2. Take egg yolks, beat them very light, and add powdered sugar.
  3. Beat again until thick.
  4. Add rose water, or vanilla flavoring.
  5. Then froth very stiff egg whites and stir the froth into the eggs and sugar, adding very lightly, a little at a time, flour (sifted twice) and 1/3 of the grated hazelnuts.
  6. Bake in two pans so as to have two layers.
  7. When baked and quite cold, you place between the two layers a mixture composed of the rest of the grated nuts, which have been stirred into one pint of thick whipped sweet cream flavored with a pinch of dry vanilla bean.
