Creamy CBO Pudding

Ingredients

  • 5 large eggs
  • 6 tablespoon salted butter
  • 1 cup onion, chopped
  • 2 cup heavy cream
  • 1/4 cup flour
  • salt
  • pepper
  • 2 tablespoon sugar
  • 16 ounce frozen corn
  • 2 tablespoon fresh chives

Directions

  1. Preheat oven to 350f degrees.
  2. Melt 4 tablespoons of the butter in a frying pan, add chopped onions, a pinch of salt and pepper, cooking up onions until soft.
  3. Place cream, eggs, flour, sugar, 2 cups of the corn, a pinch of salt and pepper into a deep bowl, using beaters, blend until only slightly "lumpy" with the corn.
  4. Add the cooked onion and the remaining corn, using the beaters on the lowest setting to simply mix well into the earlier mixture.
  5. Grease a 2 quart oven safe baking dish and pour the mixture into the dish.
  6. Sprinkle the fresh chives on top and back at 350 for 50-60 min.
  7. The mixture is ready when set, but with still light movement in the middle.
  8. Allow to set for 15 minutes before serving.
