Cream of Celery Soup

Ingredients

  • 2/3 cup celery, cut fine
  • 2 1/2 cup milk
  • 1 1/2 cup water
  • 2 teaspoon salt
  • 4 tablespoon butter
  • 1/4 teaspoon paprika
  • 6 tablespoon flour
  • 1 teaspoon chopped parsley
  • 2 tablespoon whipped cream

Directions

  1. Wash the celery thoroughly, and cut into small pieces.
  2. Add the small leaves and the water.
  3. Simmer for thirty-five minutes.
  4. Strain through a coarse strainer, rubbing all of the pulp through.
  5. Melt the butter, add the flour, salt and paprika.
  6. Add the milk and cook two minutes, stirring to prevent scorching.
  7. Add the celery stock and the pulp.
  8. Cook one minute.
  9. Fill bouillon cups three-fourths full, add two pinches of parsley and one teaspoon of cream to each serving.
