Corned Beef au Gratin

Ingredients

  • 1 1/2 cup milk
  • 2 tablespoon butter
  • 1/2 slice of onion
  • 1 egg
  • 1 piece of celery
  • 1 teaspoon salt
  • 2 tablespoon flour
  • 1/4 teaspoon paprika
  • 1 cup chopped corned beef

Directions

  1. Place the milk, onion and celery over the fire.
  2. Allow to get very hot.
  3. Remove from the fire and let stand for ten minutes.
  4. Remove the celery and onion from the milk.
  5. Melt the butter, add the flour.
  6. Mix well and slowly add the milk.
  7. Cook until the consistency of white sauce.
  8. Add the egg, well beaten, the salt, paprika, and beef.
  9. Pour into well-buttered individual dishes.
  10. Place in a moderate oven and bake twenty-five minutes.
  11. Remove from the oven and allow to stand two minutes.
  12. Remove from the moulds and garnish with parsley.
