Clarified Sugar

Ingredients

  • 1/2 pound sugar
  • 1/2 cup water
  • egg-shells

Directions

  1. Put the sugar into the cold water with the egg-shells, and stir frequently over the fire till all the sugar is dissolved and a thick syrup formed.
  2. Strain well and boil up again .
