Chicken Fricassee II

Ingredients

  • chicken, cut up
  • 2 cup water
  • butter, for frying
  • 12 small white onions
  • 2 tablespoon flour
  • pinch thyme
  • pinch celery
  • pinch salt
  • pinch salt
  • 2 tablespoon butter
  • boiled rice

Directions

  1. Roll chicken pieces in flour and brown in butter.
  2. Add remaining ingredients and cook until tender, adding water so that there are 2 cups at end of cooking.
  3. Make gravy by adding 3 tablespoons of hot liquid to yolk of an egg.
  4. Stir thoroughly, then return to rest of liquid and cook five minutes.
  5. Pour over steamed rice.
