'C' Sugar Icing

Ingredients

  • 1 cup 'C' sugar
  • 1/8 teaspoon cream of tartar
  • 1/3 cup water
  • 1 egg white
  • 1/2 teaspoon vanilla

Directions

  1. Mix the sugar, water and cream of tartar.
  2. Cook until the syrup clicks when a little is dropped in cold water.
  3. Do not stir while cooking.
  4. Have the mixture boil evenly but not too fast.
  5. Pour gently over the beaten white of the egg.
  6. Stir and beat briskly until creamy.
  7. Add vanilla.
  8. Place on the cake.
  9. If too hard, add a tablespoon of water.
