Broiled Fillets Florentine

Ingredients

  • 2 packages frozen chopped spinach
  • 1/4 cup minced onion
  • 2 pound cod, or haddock fillets
  • 4 tablespoon melted butter, or margarine, divided
  • 2 teaspoon lemon juice
  • 2 cup grated process American cheese, (1/2 pound)
  • 1/2 cup milk

Directions

  1. Cook spinach as directed on package.
  2. Cook onion in 2 tablespoons of the butter or margarine until tender; add to spinach.
  3. Preheat broiler.
  4. Place fish fillets in a greased shallow baking pan; dot with remaining butter: sprinkle with lemon juice.
  5. Broil 2 inches below heat (without turning) 8 to 10 minutes or until easily flaked with a fork but still moist.
  6. Melt cheese in milk until smooth.
  7. Transfer fish to baking dish 12 by 8 by 2 inches.
  8. Top with spinach; pour cheese sauce over all.
  9. Broil 4 inches below heat until golden.
