Broiled Fillets Florentine
Ingredients
- 2 packages frozen chopped spinach
- 1/4 cup minced onion
- 2 pound cod, or haddock fillets
- 4 tablespoon melted butter, or margarine, divided
- 2 teaspoon lemon juice
- 2 cup grated process American cheese, (1/2 pound)
- 1/2 cup milk
Directions
- Cook spinach as directed on package.
- Cook onion in 2 tablespoons of the butter or margarine until tender; add to spinach.
- Preheat broiler.
- Place fish fillets in a greased shallow baking pan; dot with remaining butter: sprinkle with lemon juice.
- Broil 2 inches below heat (without turning) 8 to 10 minutes or until easily flaked with a fork but still moist.
- Melt cheese in milk until smooth.
- Transfer fish to baking dish 12 by 8 by 2 inches.
- Top with spinach; pour cheese sauce over all.
- Broil 4 inches below heat until golden.
