Apple-Stuffed Pork Shoulder

Ingredients

  • 1 medium onion, chopped fine
  • 1/4 cup butter, or margarine
  • 1 teaspoon salt
  • few grains pepper
  • 1/4 teaspoon oregano
  • 2 1/2 cup soft bread crumbs
  • 1 3/4 cup chopped apple
  • 1/2 cup boiling water
  • boned pork shoulder, with deep pocket

Directions

  1. Cook onion in butter or margarine until golden brown; combine with remaining stuffing ingredients.
  2. Set oven for moderate, 350f.
  3. Fill pocket in pork shoulder with stuffing; fasten with small skewers laced together with white twine.
  4. Place pork on rack in open roaster.
  5. Roast, figuring 40 minutes per pound.
