
Apple-Stuffed Pork Shoulder
Ingredients
- 1 medium onion, chopped fine
- 1/4 cup butter, or margarine
- 1 teaspoon salt
- few grains pepper
- 1/4 teaspoon oregano
- 2 1/2 cup soft bread crumbs
- 1 3/4 cup chopped apple
- 1/2 cup boiling water
- boned pork shoulder, with deep pocket
Directions
- Cook onion in butter or margarine until golden brown; combine with remaining stuffing ingredients.
- Set oven for moderate, 350f.
- Fill pocket in pork shoulder with stuffing; fasten with small skewers laced together with white twine.
- Place pork on rack in open roaster.
- Roast, figuring 40 minutes per pound.
