Venetian Ham Horns

Ingredients

  • 3 ounce sliced cooked lean ham
  • 1 tablespoon aspic jelly
  • stiff aspic jelly
  • 1/2 cup mayonnaise
  • 1/4 pint vegetable, macedoine
  • 1/4 ounce gelatine
  • seasoning

Directions

  1. Cut the ham in small triangles, dip each piece into liquid aspic jelly and slip it inside a metal horn case.
  2. Stand these moulds upright in a bowl of ice.
  3. Dissolve the gelatine in the 1 tablespoon aspic jelly and mix with the mayonnaise, vegetable macedoine and seasoning to taste.
  4. Fill this mixture into the ham horns, and leave to set firmly.
  5. Unmould by dipping the cases for a moment into hot water.
