Tomato Pot Roast

Ingredients

  • 2 1/2 to 3 lbs. beef chuck, or rump
  • 1 tablespoon salt
  • 2 cup tomato juice
  • 2 tablespoon lard
  • 5 potatoes
  • 1/2 clove of garlic
  • 5 carrots

Directions

  1. Brown meat slowly in lard.
  2. When well browned add tomato juice, salt and garlic.
  3. Cover tightly and simmer until tender, approximately 3 1/2 hours.
  4. Add vegetables 45 minutes before done.
Note: Serve with Green Salad
