Swiss Steak

Ingredients

  • 1 pound round steak, two-thirds of an inch thick
  • 1 teaspoon pepper
  • 1/2 cup water
  • 5 tablespoon flour
  • 1 tablespoon onion
  • 1 bay leaf
  • 2 cloves
  • 1/4 teaspoon salt
  • 1 tablespoon bacon, fat

Directions

  1. Wipe the steak with a damp cloth, trim the edges to remove any gristle, and pound the flour into the meat, using a side af a heavy plate for the pounding.
  2. This breaks up the tendons of the meat.
  3. Place the bacon fat in a frying-pan and when hot, add the meat.
  4. Brown thoroughly on each side.
  5. Lower the flame.
  6. Add the bay leaf, salt, pepper, onion and water.
  7. Cover with a lid and allow to cook slowly for one and a half hours.
  8. More water may be needed if the gravy boils down.
  9. Pour the gravy over the meat when serving.
  10. This recipe is good for the fireless.
