Sweetbreads a la Windsor

Ingredients

  • 2 tablespoon butter
  • 1 1/2 tablespoon flour
  • 1/2 cup cream
  • 2 sweetbreads
  • 1 cup milk
  • 1 cup French peas
  • seasoning

Directions

  1. Put sweetbreads in cool water with a little salt for one hour.
  2. Drain, put into saucepan, cover with boiling water and boil very slowly 25 minutes; drain and when cool separate and remove all membrane.
  3. Cut into small pieces.
  4. Melt butter, add flour and stir until smooth.
  5. Add milk and cream slowly, stirring constantly until boiling.
  6. The sweetbreads should be previously cooked and cut into cubes, add seasoning, peas and sweet- breads to sauce.
  7. Heat thoroughly and serve hot.
