Stewed Pork Hearts with Rice Border

Ingredients

  • 1 1/2 pound pork hearts
  • 1 stalk celery
  • 2 tablespoon cubed onion
  • 2 tablespoon flour
  • 2 tablespoon butter
  • 2 tablespoon cubed carrot
  • 1/2 teaspoon salt
  • 1 tablespoon vinegar

Directions

  1. Wash hearts and remove all veins and tough fibers.
  2. Cut in small pieces and cover with water for 15 min.
  3. Drain; add boiling water to cover.
  4. Add cut carrot, onion and celery.
  5. Simmer gently 3-4 hrs.
  6. Mix flour and melted butter and stir into the hot stew.
  7. Add vinegar and salt, and stir until thickened.
  8. Serve with border of steamed rice.
  9. Sprinkle with chopped parsley.
Note: Serve with Stewed Tomatoes, Cole Slaw
