Southern Fried Chicken

Ingredients

  • 1/2 cup fat or cooking oil
  • 2 tablespoon butter, or margarine
  • 1/2 cup flour
  • 1 teaspoon salt
  • 2 1/2 pound ready-to-cook broiler-fryer chicken, cut up

Directions

  1. Melt fat and butter over low heat in a chicken fryer or large skillet.
  2. Combine flour and salt.
  3. Coat chicken with flour mixture; fry over low heat until browned on one side; turn to brown on all sides evenly.
  4. Add water.
  5. Cover; simmer 30 minutes, adding more water if necessary.
  6. Uncover; cook 15 minutes.
