Smetanove Mechurinky (Cream Puffs)

Yield: 12 medium puffs

Ingredients

Directions

  1. Add the butter to the hot water and bring to boiling point.
  2. Add flour and salt all at one time.
  3. Stir rapidly and constantly until the paste leaves the sides of the pan.
  4. Remove from the fire and when cool add the eggs one at a time, beating until thoroughly blended with the paste mixture.
  5. Drop by spoonfuls on a greased baking sheet about two inches apart or bake in muffin pans.
  6. During baking, the dough expands to twice or more its original size.
  7. Bake in a hot oven 425 degrees until puffed and golden brown for 25 minutes.
  8. When cool slit the side, fill with whipped cream, crushed fruit, or custard.
  9. If desired, sprinkle the top with powdered sugar.
