Schnitzel Beans

Ingredients

  • 4 slices bacon
  • 1 teaspoon salt
  • 1 quart string beans
  • 1/4 teaspoon pepper
  • 3 medium onions, sliced
  • 1 cup hot water
  • 2 cup tomatoes, chopped

Directions

  1. Dice the bacon and fry until crisp.
  2. Slice the onions and fry until soft.
  3. Cut the beans into small (1-inch) pieces and brown them slightly with the bacon and onions.
  4. Add the tomatoes, seasoning and boiling water.
  5. Cover and cook very slowly until beans are tender.
  6. Add water if necessary, so there will be a little sauce to serve with the beans.
