Scalloped Spinach

Ingredients

  • 2 pound spinach
  • 2 eggs, beaten
  • 2 cup milk
  • 2 cup bread crumbs
  • 4 tablespoon butter
  • 1/2 cup chopped bacon
  • salt
  • pepper

Directions

  1. Wash spinach thoroughly.
  2. Drain and cook with a little water in covered pot, over moderate heat for 8 to 10 minutes.
  3. Drain and chop the spinach.
  4. Add milk, the beaten eggs, 1 1/2 cups of the bread crumbs, melted butter, salt and pepper then mix well.
  5. Sprinkle the remaining 1/2 cup bread crumbs and the chopped bacon, on the top.
  6. Bake in moderate oven (350f) for 35 minutes.
