Scalloped Chipped Beef and Potatoes
Ingredients
- 1 cup butter, (1/2 pound)
- 2 cup flour, (1/2 pound)
- 1 tablespoon salt, (1/2 ounce)
- 2 quart boiling water
- 2 quart evaporated milk
- 1 peck potatoes
- 1 pound sliced dried beef
- 1/2 cup chopped onions, (1/4 pound)
Directions
- Prepare a white sauce of the butter, flour, salt, water and milk.
- Peel and slice potatoes, and shred dried beef.
- Place a layer of potatoes on bottom of greased baking pan.
- Add onions and dried beef, and one-half of the white sauce.
- Add another layer of potatoes and cover with remaining white sauce.
- Bake in a moderate oven (350f) until potatoes are tender, about 1 hour.
