Scalloped Chipped Beef and Potatoes

Ingredients

  • 1 cup butter, (1/2 pound)
  • 2 cup flour, (1/2 pound)
  • 1 tablespoon salt, (1/2 ounce)
  • 2 quart boiling water
  • 2 quart evaporated milk
  • 1 peck potatoes
  • 1 pound sliced dried beef
  • 1/2 cup chopped onions, (1/4 pound)

Directions

  1. Prepare a white sauce of the butter, flour, salt, water and milk.
  2. Peel and slice potatoes, and shred dried beef.
  3. Place a layer of potatoes on bottom of greased baking pan.
  4. Add onions and dried beef, and one-half of the white sauce.
  5. Add another layer of potatoes and cover with remaining white sauce.
  6. Bake in a moderate oven (350f) until potatoes are tender, about 1 hour.
