Salted Almonds II

Ingredients

  • 1/4 - 3/8 cup olive oil
  • 1/4 pound almonds
  • nuts
  • salt

Directions

  1. Place olive oil into a frying-pan and heat slowly, until it just reaches smoking point.
  2. Remove from the heat and add almonds, which should be quite dry.
  3. Cook slowly over a gentle heat, constantly turning them with a spoon, until golden-brown.
  4. Strain off the oil and toss the nuts in salt.
  5. Bottle in dry air-tight jars.
