Rice Croquettes with Jelly

Ingredients

  • 1 cup steamed rice
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 teaspoon chopped parsley
  • 1 tablespoon butter
  • 3 tablespoon flour
  • 1/8 teaspoon paprika
  • 2 tablespoon grape jelly

Directions

  1. Mix the steamed rice, egg-yolk, butter, paprika, salt and parsley.
  2. Shape into flat disks one inch thick and three inches in diameter.
  3. Roll in flour.
  4. Make an indentation in the center of each with a spoon, to hold the jelly.
  5. Fry in hot deep fat until brown.
  6. Drain, the wrong side up.
  7. Heat in a hot oven and serve hot.
  8. Place a cube of jelly in the center of each.
