Rice Croquettes

Ingredients

  • 2 cup rice, boiled cold
  • 3 tablespoon melted butter
  • 3 eggs, beaten well
  • 1 egg
  • small amount flour
  • 1/2 cup powdered cracker
  • 2 tablespoon sugar
  • 1 pinch lemon peel, grated fine
  • salt

Directions

  1. Beat eggs and sugar together, and work the butter into the rice.
  2. Stir with this, the beaten eggs.
  3. Season and make up very soft; chill in ice-box; mould in forms; crumb, roll in egg and milk, and then crumb again and fry in deep fat.
