Raisin Rice Pudding

Ingredients

Directions

  1. Mix rice with 2 cups of the milk in the top of a double boiler; cook over hot water until tender.
  2. Add raisins and butter.
  3. Combine eggs, sugar, vanilla, salt, and remaining milk.
  4. Stir into hot rice mixture.
  5. Pour into a greased 1 1/2-quart baking dish.
  6. Sprinkle with cinnamon.
  7. Set in pan and fill pan half full of warm water.
  8. Bake in slow oven 325f, for 30 minutes or until set.
