Rice Cakes

Ingredients

  • 1 1/2 cup boiled rice
  • 1 egg yolk
  • 1/2 teaspoon salt
  • 6 tablespoon breadcrumbs
  • 4 tablespoon fat, (lard and butter mixed)

Directions

  1. Mix the rice and salt with the egg.
  2. Shape into flat cakes, two and a half inches in diameter and one-half an inch thick.
  3. Roll in bread crumbs and saute in hot fat until brown on both sides (about eight minutes).
  4. If the egg does not sufficiently moisten the rice, add one tablespoon of milk.
