Potato Omelette

Ingredients

  • 2 large white potatoes
  • 2 eggs
  • 1/2 small onion, chopped fine
  • 1 pint milk
  • 1/4 pound butter
  • 1 tablespoon chopped parsley
  • pepper
  • salt

Directions

  1. Boil 2 large white potatoes, cut them in dice shape.
  2. Mix all the ingredients together; through this dredge a little flour.
  3. Butter your dish, dredge a little flour on top, and bake brown in a quick oven.
