Potato Croquettes

Ingredients

  • 1 cup hot mashed or riced potatoes
  • 1 egg yolk
  • 1 tablespoon milk
  • 1/8 teaspoon celery salt
  • 1 teaspoon salt
  • 1/2 teaspoon chopped parsley
  • 1 tablespoon butter
  • 1/8 teaspoon onion, extract
  • 1/8 teaspoon paprika
  • 3 tablespoon flour

Directions

  1. Mix the mashed potatoes, celery salt, parsley, onion extract, egg yolk, milk, salt, butter and paprika.
  2. Beat two minutes.
  3. Shape into balls two inches in diameter.
  4. Roll in flour and allow to stand fifteen minutes.
  5. Cook in deep fat three minutes or more until a delicate brown.
  6. Drain on brown paper and keep hot in a moderate oven.
