Potato Cakes

Ingredients

  • 2 cup mashed potatoes
  • 1 tablespoon lard
  • 1 tablespoon butter

Directions

  1. Form cold seasoned mashed potato into cakes two inches in diameter.
  2. Dip the cakes lightly into a little flour.
  3. Allow one tablespoon butter and one tablespoon lard to get very hot in a frying-pan.
  4. Put in the cakes, brown on each side, and serve.
