Point Adams Special
Ingredients
- 2 pound canned salmon
- 1 teaspoon pickling spices
- 1 No. 2 1/2 can tomatoes, strained
- 1 medium size onion, chopped
- 1 teaspoon salt
- 2 tablespoon butter
- 1 tablespoon sugar
Directions
- Drain liquid from salmon and to it add strained tomatoes, salt, sugar, and pickling spices.
- Bring mixture to a boil and strain.
- Saute onion in butter until tender but not brown.
- Add strained tomato mixture.
- Remove any outside skin from salmon, cut in slices.
- Lay slices in tomato mixture and simmer for 30 minutes.
