Oyster Croquettes
Ingredients
- 25 oysters
- 1/4 cup oyster liquor
- 1/4 cup cream
- 1 tablespoon butter
- 2 tablespoon flour
- 1 tablespoon chopped parsley
- 1 tablespoon chopped onion
- 1/2 tablespoon grated nutmeg
- 1/2 tablespoon salt
- 1/2 tablespoon cayenne pepper
- 2 egg yolks
- bread crumbs
Directions
- Boil 25 oysters five minutes, chop them very fine, add liquor, cream, butter, flour (mixed together), parsley, chopped onion, grated nutmeg, salt, and cayenne pepper to taste.
- Boil all together until it thickens.
- When nearly done, add the yolks of 2 eggs, mould, roll in eggs and bread crumbs, fry in boiling fat.
