Oyster Croquettes

Ingredients

  • 25 oysters
  • 1/4 cup oyster liquor
  • 1/4 cup cream
  • 1 tablespoon butter
  • 2 tablespoon flour
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped onion
  • 1/2 tablespoon grated nutmeg
  • 1/2 tablespoon salt
  • 1/2 tablespoon cayenne pepper
  • 2 egg yolks
  • bread crumbs

Directions

  1. Boil 25 oysters five minutes, chop them very fine, add liquor, cream, butter, flour (mixed together), parsley, chopped onion, grated nutmeg, salt, and cayenne pepper to taste.
  2. Boil all together until it thickens.
  3. When nearly done, add the yolks of 2 eggs, mould, roll in eggs and bread crumbs, fry in boiling fat.
