Orange Cake

Ingredients

  • 1/3 cup butter
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/4 cup orange juice
  • 2 eggs, beaten separately
  • 1/4 cup milk
  • Grated rind of one orange
  • 1 2/3 cup flour
  • 3 teaspoon baking powder
  • 1/2 teaspoon lemon extract

Directions

  1. Cream the butter, add the sugar and egg-yolks mix thoroughly.
  2. Add the orange rind.
  3. Add the baking powder, salt and flour sifted together and then the orange juice and milk.
  4. Mix, and beat one minute.
  5. Add the egg-whites beaten stiffly, and the lemon extract.
  6. Bake in two square cake tins fitted with waxed paper for twenty-five minutes in a moderate oven.
