Marshmallow Pudding

Ingredients

  • 2 teaspoon granulated gelatin
  • 1/2 cup boiling water
  • 2 tablespoon cold water
  • 1 teaspoon lemon extract
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 egg, -white

Directions

  1. Soak the gelatin in cold water for three minutes.
  2. Add the boiling water, and when thoroughly dissolved add the sugar.
  3. Allow to cool.
  4. Beat the egg-white stiff.
  5. When the gelatin begins to congeal, beat it until fluffy, add the extracts and then the egg-white.
  6. Beat until stiff.
  7. Pour into a moistened cake pan.
  8. When hard and cold, remove from the pan, cut in one inch cubes and pile in a glass dish.
