Lemon Rice Pudding

Ingredients

  • 2/3 cup cooked rice
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 1 tablespoon powdered sugar
  • 1 egg
  • 1 teaspoon lemon juice

Directions

  1. Beat the egg-yolk, add the sugar, salt and lemon juice.
  2. Add the milk and the rice.
  3. Cook one minute, stirring constantly to prevent scorching.
  4. Pour into a well-buttered pudding dish.
  5. Beat the egg-white very stiff.
  6. Add the powdered sugar and the lemon juice, one teaspoon.
  7. Pile lightly on top of the pudding.
  8. Bake thirty minutes in a slow oven.
