Lemon Pie Meringue

Ingredients

  • 2 egg whites, beaten stiff
  • 5 tablespoon sugar, (powdered preferred)
  • 1/2 teaspoon lemon extract

Directions

  1. Do not beat the egg-whites until ready for use.
  2. Then beat until stiff and add the sugar and extract, beating only a minute.
  3. Pile the meringue lightly on top of the filling, and bake the whole slowly.
  4. If baked too quickly, the meringue will rise and then fall.
  5. Bake only until it turns a golden brown.
