Funeral Pie

Ingredients

  • 1 cup seeded raisins, washed
  • 1 egg, well beaten
  • 2 cup water
  • juice of a lemon
  • 1 1/2 cup sugar
  • 2 teaspoon grated lemon rind
  • 4 tablespoon flour
  • pinch of salt

Directions

  1. Soak raisins 3 hours, mix sugar, flour and egg.
  2. Then add seasoning, raisins and liquid.
  3. Cook over hot water for 15 minutes, stirring occasionally.
  4. When the mixture is cool, empty into pie-dough lined pie plate.
  5. Cover pie with narrow strips of dough, criss-crossed and bake until browned.
