Fried Pork Brains

Ingredients

  • 2 pound pork brains
  • 1/2 cup flour
  • salt
  • 3 tablespoon fat
  • vinegar
  • salt
  • pepper

Directions

  1. Soak the brains in cold water.
  2. Remove membranes.
  3. Simmer very gently for 15 minutes in water to which 1 teaspoon salt and 1 tablespoon of vinegar have been addedtoeach quart ’ of water.
  4. Drain; chill in cold water.
  5. Drain.
  6. Season, roll in flour and fry in hot fat until nicely browned on both sides—about 15 minutes.
Note: Serve with Tomato Sauce, Green Lima Beans
