Fricasseed Pork Hearts

Ingredients

  • 3 -4 pork hearts
  • 2 onions
  • seasoning
  • 1 cup diced carrots
  • flour
  • 1 cup canned tomatoes
  • bacon fat
  • 1/2 cup hot water

Directions

  1. Wash and clean hearts.
  2. Slice or chop the hearts into 3/4-inch pieces across the grain.
  3. Season.
  4. Roll in four and brown in bacon fat, in a heavy kettle.
  5. Add sliced onions, tomatoes and hot water.
  6. Cook slowly, covered, on top of the stove for 2 1/2 to 3 hours.
  7. Add carrots the last hour.
  8. Add more water from time to time if original amount cooks away.
  9. Thicken liquid for gravy.
Note: Serve with Hominy, Buttered Beets
