Floating Island

Ingredients

Directions

  1. Scald milk in 1-pint saucepan.
  2. Add 2 tablespoons sugar and salt; stir until sugar dissolves.
  3. Beat egg yolks slightly.
  4. Add milk mixture to egg yolks.
  5. Cook over hot water until thickened, stirring constantly.
  6. Cool.
  7. Add vanilla.
  8. At this point you will have soft custard or custard sauce, often called for in recipes.
  9. Pour into shallow serving dish.
  10. Chill.
  11. Set oven for 325f.
  12. Beat egg whites stiff.
  13. Add remaining sugar gradually, beating constantly.
  14. Grease 9-inch pie plate; place over 9-inch layer cake pan almost filled with hot water.
  15. Put meringue mixture into pie plate; swirl top with back of spoon.
  16. Bake 15 minutes.
  17. Remove meringue with broad spatula; slip on custard.
