Fancy Cakes

Ingredients

  • 1/2 cup butter
  • 1/2 cup milk
  • 1 cup sugar
  • 1 3/4 cup flour
  • 8 egg yolks
  • 2 teaspoon baking powder
  • 2 teaspoon lemon extract

Directions

  1. Cream the butter, add the sugar and mix well.
  2. Beat the egg-yolks until very thick, and add to the first mixture, mix and sift together the flour and baking-powder and add the milk alternately with the flour mixture, beating well.
  3. · Beat two minutes after mixing.
  4. Add the extract.
  5. Pour to the thickness of one inch into flat pans lined with buttered paper.
  6. Bake twelve minutes in a moderate oven.
  7. Remove from the fire and when cool, cut into shapes with fancy animal cutters.
  8. The individual cakes may be iced if desired.
